Hearty Taco Salad: Start with Fresh spinach or any hearty mixed greens, ground meat, grape tomatoes halved, roasted corn from Trader Joe’s & fresh avocados.
I love to use salsa & lime juice for the dressing. Then garnish with fresh strawberries for extra vitamin C! I used the leftover taco meat & roasted corn from Taco Tuesday. It was already cooked & cold, ready for use.
For the ground meat: cook thoroughly in a large skillet with onions (1/2 wh.onion) & garlic (2 pods chopped), drain the liquid, then season to taste with chili powder, paprika, sea salt, cayenne, oregano, cumin & cilantro. Simmer on low for 10 mins. Enjoy!
