2 Minute Salad Recipe

Ingredients:

Crispy Greens – I like Little Leaf Farms baby crispy green leaf

Chunks of Chicken

Sprinkle of Parmesan

Pickled Red Onions

Creamy Ceasar

Chicken:

-chunk 3 chicken breast in 1 1/2″ pieces

-drizzle with olive oil (1 TBSP)

-add 1 tsp cumin

-add 1 tsp garlic powder

-add 1tsp salt

-add 1/2 TBSP black pepper

-add 1/2 TBSP Smoke Paprika

-add fresh parsley or 1 tsp dried parsley

Mix all ingredients well.

Cook:

Place chicken in warm air fryer on 350 for 8 minutes

Caesar Dressing:

2 TBSP Plain Greek Yogurt

1/4 cup Extra Virgin Olive Oil

1 garlic pod minced

1 tsp of Worcestershire sauce

1 TBSP Lemon juice

Salt & pepper to taste

Mix all ingredients in small blender, immersion blender or whisk to blend well

Assemble the salad by adding all ingredients to a bowl, drizzle the dressing over it & using kitchen sheers to chop the salad until the dressing is well blended. Enjoy!

*Preparation is key! I keep staples in my frig like the pickled onions, grated parmesan, homemade dressing and leftover protein so I am able to refuel right after a workout.

**I would also add pumpkin seeds, walnuts or almonds (forgot them at the time I made it).
